July Recipe: Coco-Banana Melt Dessert
This gooey grilled treat is a fruity version of the classic s’more.
Ingredients:
- a banana
- chocolate chips
- mini marshmallows
- aluminum foil
Directions:
- Peel a banana and cut a slit lengthwise.
- Place banana on a sheet of aluminum foil.
- Stuff banana with chocolate ships and mini marshmallows.
- Wrap the foil around the banana and place it on a grill for about 5 minutes.
- Let cool for a couple of minutes, then eat with a spoon.

June Recipe: Pepper Butterflies
You can create these edible butterflies made from assorted vegetables. Here’s how to do it:
Ingredients:
- 1 red and 1 yellow bell pepper
- 1 cucumber
- cherry tomatoes
- chives
- 1/2 cup buttermilk
- 3 tablespoons mayonnaise
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh herbs
- salt and pepper
Directions:
- Cut the peppers crosswise into 1/2-inch thick rounds then cut each round in half to use as wings.
- Cut the cucumber into 1/2-inch thick long strips for the body.
- Poke two holes in the top of a cherry tomato with a toothpick and insert chives as antennae.
- Arrange on a plate – use the cucumber for the body, place two cut pepper wings, and add the cherry tomato head.
- To make the dip: combine buttermilk, mayonnaise, lemon juice and herbs in a small bowl, stir until smooth and add salt and pepper to tase.
Server your Pepper Butterflies with the dip. You just made a treat that’s fun and good for you too!
Poppin’ Parmesan Popcorn
Curling up with a good book is like watching a movie play out in your own head and what better way to enjoy your book than while munching on some tasty popcorn? Popcorn is a great way to snack, full of fiber and in this recipe, even protein and calcium from the cheese! So dive into your book, enjoy a crunchy morsel or two and create a whole world of adventure right in your imagination!
Makes 2 servings, one for you and one to share!
Ingredients:
- 4 cups freshly popped plain popcorn
- 2 Tablespoons unsalted butter, melted and slightly cooled
- 1/3 cup finely grated parmesan cheese
- garlic salt to taste
Directions:
Place popcorn in a Ziploc bag. Pour in the melted butter and parmesan. Seal the bag and shake vigorously until the popcorn is coated with the cheese.
Transfer to a bowl and sprinkle with a couple pinches of the garlic salt to taste. Serve immediately.
Keepin’ it Cool Summer Snack Kebabs
Cool down this summer with this refreshing mix and match kebab snack! Make them more portable and bite size by using toothpicks for family road trips or make a heartier snack by using coffee stirrers or popsicle sticks! By mixing and matching your favorite cool kebab ingredients, you can create your own signature snack! Any way you mix it up, these tasty mouthfuls will surely keep it cool this summer!
Makes about 6 large kebabs or about 12-15 small kebabs
Ingredients:
- 6 wooden coffee stirrers, popsicle sticks OR 15 toothpicks
- 1 cup cheese tortellini, cooked according to package instructions and chilled
- 1 cup sweet cherry tomatoes
- 1 cup mini mozzarella balls (bocconcini)
- 12 fresh basil leaves
- olive oil
- white balsamic vinegar or white wine vinegar
- sea salt
Directions:
- Arrange ingredients in front of you on a clean work space.
- Working with one kebab at a time, skewer one chilled tortellini and one cherry tomato onto a kebab stick and set aside.
- Wrap one mini ball of mozzarella inside one leaf of basil and skewer below tomato.
- Repeat until kebab stick is filled and then repeat with remaining kebabs.
- Drizzle kebabs with a little olive oil, a little vinegar and a pinch of salt.
- Serve immediately or place in a container for the road, enjoying within 2 hours of making.
